Strawberry Cake

I came across this recipe when I was browsing on my new iPad and had to share. I can't wait to buy some strawberries at the farmers market and give this recipe a try.

Strawberry Cake

  • 6 tablespoons of unsalted butter, at room temperature
  • 1 1/2 cups of all-purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of granulated sugar
  • 1 large egg
  • 1/2 cup of buttermilk
  • 1 teaspoon of pure vanilla extract
  • 1 pound of strawberries, washed and sliced

Preheat the oven to 350 degrees. Butter a 10-inch pie plate. Sift flour, baking powder, and salt together into a medium bowl. Set aside. Next, put the butter and 1 cup of the sugar in the bowl. Mix with an electric mixer until pale and fluffy, about 3 minutes. Add in the egg, buttermilk, and vanilla extract. Mix until combined. Then, gradually mix in flour mixture. Transfer batter to prepared pan. Arrange strawberry slices on top of batter. Bake cake for 10 minutes. Reduce oven temperature to 325 degrees. Bake until cake is golden brown and firm to the touch, about 50-55 minutes. Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
