Mini Apple Blueberry Cast Iron Crisp
I bought a mini cast iron skillet to make mini pizzas, but was craving something sweet this morning. I checked my freezer and pantry and decided on a mini Apple Blueberry Crisp.
1 cup chopped apples
1 cup blueberries (frozen is okay)
1/4 cup all-purpose flour
1/4 cup granola
1 teaspoon ground cinnamon
1 teaspoon nutmeg
1/3 cup packed brown sugar
4 tablespoons softened unsalted butter
Preheat oven to 350 degrees and spray mini cast iron pan with non-stick cooking spray.
Spread chopped apples in bottom of pan, sprinkle blueberries on top of apples.
In a small bowl, combine flour, granola, cinnamon, nutmeg, and brown sugar. Cut in butter using a fork until combined and butter is in small pieces. Sprinkle this mixture on top of fruit.
Bake 35 minutes until apples are soft and crisp on top is browned.
