Curried Egg Salad

I got some dried cherries from my mother-in-law over Thanksgiving, which are good on their own but figured to sprinkle in some other recipes like a savory dish of Curried Egg Salad.


12 hard-boiled eggs, peeled, halved
1/4 cup dried cherries
1 large green onion, finely chopped
2 celery sticks, finely chopped
2 tablespoons minced parsley
1/2 cup plus additional mayonnaise
2 3/4 teaspoons curry powder


Chop eggs and mix in a large bowl with the dried cherries, green onion, and parsley. Mix 1/2 cup mayonnaise and curry powder in small bowl; stir into egg mixture. Mix in more mayonnaise by tablespoonfuls if salad is dry. Season with salt and pepper.
